    • 4 Lbs (1.8 Kg) Beef Oxtail
    • 2 Stalks Celery
    • 3 Garlic Clove(s)
    • 2 Green Onions
    • 1/2 tsp Ground Black Pepper
    • 1/2 Lemon(s)
    • 1 tsp Salt
    • 1 Cup Sherry
    • 1 Sweet Potato
    • 1/2 tsp Thyme Leaves
    • 1 Can (5.5 fl oz / 156 ml) Tomato Paste
    • 1 TBSP Vegetable Oil
    • 1 White Onion(s)
    • 1.5 Lbs (680 g) Yukon Gold Potatoes
